The Story behind our Cornish Scallops
Discover the story behind our Cornish Scallops on our new seasonal menu at The Royal George. Where exceptional British produce meets the art of cooking over Japanese charcoal.
At The Royal George, we believe that the finest dishes begin with exceptional ingredients. This season, our dining spaces are celebrating the very best of British produce, with our Cornish Scallops taking centre stage.
Sourced from reputable fishmongers in Cornwall and delivered fresh several times a week, these beautiful scallops are a celebration of quality, provenance and thoughtful cooking. Prepared simply and cooked over Japanese charcoal, every element of the dish is designed to enhance the natural sweetness of the scallop rather than overpower it.

From the Cornish Coast to the Upper Deck
Our commitment to quality begins long before the scallops reach the grill. Working with trusted fishmongers in Cornwall allows us to source exceptional seafood, delivered multiple times each week to maintain its freshness and quality.
Each scallop is carefully cleaned by our kitchen team, with particular attention paid to removing any hidden sand beneath the muscle and around the delicate coral. We leave the roe intact, preserving the full flavour of the scallop and ensuring that every part of this beautiful ingredient can be enjoyed.
For us, a great dish begins with respecting the produce. The less we need to do to an exceptional ingredient, the more opportunity it has to shine.
The Art of Cooking Over Japanese Charcoal
The secret to this dish lies in the balance between intense heat and gentle finishing.
Lightly brushed with oil and seasoned with a delicate sprinkle of salt, the scallops are placed directly onto a red-hot Japanese charcoal grill, still nestled in their shells. They receive an initial burst of intense heat for approximately 20 seconds before being turned and moved to a slightly cooler part of the grill.
This technique creates a beautiful smoky character while allowing the scallop to retain its delicate texture and natural sweetness.
Next comes the clarified herb butter. Added directly to the shell, it gently poaches the scallop as it finishes cooking over the charcoal. The butter enriches the natural juices, bringing a subtle herbal fragrance and a luxurious finish without masking the flavour of the seafood.
To complete the dish, we add fresh tomato concassé, finely chopped chives and a squeeze of lemon. The tomato introduces a light, fresh acidity, while the chives bring a delicate savoury note. A final touch of lemon lifts the richness of the butter, creating a beautifully balanced plate.
Simple Ingredients. Exceptional Flavour.
What makes our Cornish Scallops a favourite is their simplicity. There is no need for elaborate techniques or an abundance of ingredients when the quality of the main ingredient speaks for itself.
It is a dish that reflects our approach to seasonal dining at The Royal George: sourcing thoughtfully, cooking with care and allowing outstanding produce to be showcased and enjoyed.
